Spice

“He who controls the spice controls the universe.”

― Frank Herbert, Dune

I'm learning about spice. Just plain food was always ok with me, but spice is pretty nice. It is in my neverending mission to get greens into my body every day, I find spice.

Since they are quite concentrated, it is especially important to use organically grown spices. Even if they may be harder to find, it is such a great feeling to seek them out and support these farmers. The United Nations has said that organic small scale farming can not only feed the world, it is the ONLY way to feed everyone.

Spices are also storable leafy greens (and other bright colored) food. In the case of other color spices, often they are bright intense colors reflecting the same stored sunshine goodness, so I actually count them as the same as greens for my purposes. Since spices are dried, you can use them even in the time of year when local produce might be harder to find. Turns out most common spices are green super foods or even also semi medicinals

Another stored sunshine leafy green that can be re-activated in the winter is dried seaweed! (To be sure your seaweed is from safe waters, buy only from reputable sources.)

“Each spice has a special day to it. For turmeric it is Sunday, when light drips fat and butter-colored into the bins to be soaked up glowing, when you pray to the nine planets for love and luck.”

― Chitra Banerjee Divakaruni, The Mistress of Spices
