This blender soup can be spun up in five. It is great when you have a lot of good tomatoes and you want a light, quick lunch, liquid salad, or appetizer. It will last in the fridge for a few days.
For the fresh herbs, today I found in my bathtub garden: sage, parsley, chives, oregano and rosemary.
I use whatever I have on hand, including also thyme, basil, dill, or others. You can use dried herbs if you do not have fresh, or no herbs.
Blend up:
Fresh TOMATOES
A peeled chunked CUCUMBER
Juice of a half LEMON
A tablespoon diced yellow ONION
Liberal splash up to half cup OLIVE OIL
SALT and BRAGGS to taste
Fresh HERBS & SPICES: dried or fresh. Spices are not just for yumminess.
They are healthy for us, and most can even be considered superfoods.
I added a garnish of chopped chives and the flowers of the sage plant that happens to be blooming now.
Have some now! Maybe you will feel super!
